One of the changes I made that really allowed me to lose 50 pounds and enjoy food was to change the way I thought about food. I used to think opening a package or going through a drive through to pick up packaged food was a convenient way to eat. I realized that by looking at natural foods as convenient, I could eat healthy without all the additives, sugars and fats that many packaged foods contain. Making a salad became just as convenient to me as going through a drive through. The key to making natural food convenient is to always have easy natural ingredients on hand. This is as simple as shopping in the produce section of our grocery store each week. Stock up on peppers, lettuce, spinach and humus. In five minutes you can have a delicious salad that is low in calories but big in taste!
Easy Salad for Lunch
One Red or Green Pepper
One Cup Spinach
One Cucumber
Three Tablespoons Humus
One Tablespoon Balsamic Vinegar
Rinse Pepper, Spinach and Cucumber. Pat dry.
Slice Pepper and Cucumber into bite sized pieces.
Put Spinach in a bowl.
Top with Pepper and Cucumber
Mix humus and balsamic vinegar in a small bowl.
Pour humus and vinegar on salad.
Sprinkle with pepper or spices like oregano and dill if desired.
Enjoy!
If you want to take the salad to work for lunch, you can prepare the ingredients the night before. Put pepper, spinach and cucumber in a covered bowl in the fridge to chill overnight. Mix the humus and vinegar together the night before and keep in a separate container until lunchtime so that the salad does not get soggy. Make sure you keep the salad chilled at work until lunch and enjoy with a nice cup of green tea!
