I try to enjoy the bounty of every season! If strawberries are in season, I am eating strawberries. It's peach season right now where I live! I love the taste of a fresh peach ripened to perfection! Today I added peaches to my salad and to my tortilla wrap!
Recipe for Peachy Tortilla and Spinach and Peach Salad
1 teaspoon balsamic vinegar
1 teaspoon olive oil
1 cup washed spinach
1 corn tortilla wrap
1 tablespoon humus
1 tablespoon red pepper jelly
t teaspoon dijon mustard
Put spinach in a bowl.
Slice peaches up into little pieces.
Sprinkle the spinach with half of the peaches.
Mix balsamic, olive oil and mustard to make dressing and drizzle on salad.
Heat a small non-stick frying pan and place corn tortilla in pan.
Once tortilla is warm, remove and spoon humus, red pepper jelly and mustard on the tortilla.
Top the tortilla with spinach and peach slices and roll the tortilla into a wrap.
(If you are gluten or wheat free like I am, look for a corn tortilla that only contains corn, salt and water as the ingredients.)
