Mother's Day has always been a special day for me! When I was a little girl, I loved going into the kitchen and preparing breakfast for my mom. It didn't really matter to my mom what I prepared... she would wait patiently in bed and pretend she was asleep while I made a tray with some cereal, milk, toast and tea. Then I would carry it up to her room, knock on the door and yell "Happy Mother's Day". My mom would pretend she was surprised and she always looked so happy to have her breakfast in bed. When I became a mom, the tradition of breakfast in bed continued with my children and their dad making breakfast for me in bed. It has been my favourite part of Mother's Day too and my husband has been a big part of making my day special! He would gather our children together and they would make banana chocolate chip pancakes. Then they would all pile on my bed with enough forks for all of us and we would all eat breakfast in bed together! Even though I have changed the type of food I eat, I still eat banana chocolate chip pancakes on mother's day! I have created a healthier version of banana chocolate chip pancakes in Linda's Healthy Eating Cookbook and I was so happy my husband made the pancake recipe on Mother's Day morning and brought me breakfast in bed! It was just as wonderful as ever!
